A chef friend of mine is always putting sugar in his coffee. Not too much, just a little bit. I finally understood why: below levels of detectable sweetness, sugar enhances flavor. For a rough and ready persona - what good cook isn’t - he’s got a really refined palette.
“Hey this tastes like yirgacheffe” he said. Close. This Coffee is a bourbon varietal from western Rwanda.
Together we settled on a tasting profile the started with earthy notes (read: “dirt” on the front end) with a plum finish. As the temperature drops those earthy notes materialze into hints of soft ginger candy.
Pine Coffee Supply’s offical tasting notes include grape candy, lime zest and candied ginger.
This coffee was delicious enough that my friend insisted that I get him another batch the last time he came through town.
